Tomorrow Cellars - 2024 Red Blend
A complex, elegant, non-alcoholic red wine grounded in Petite Sirah sourced from sustainably farmed vineyards. Aged 14 months in one-year-old French oak barrels, this alcohol-removed red wine is intentionally lighter in body—a natural result of the absence of ethanol. Reminiscent of a light-styled claret, it offers integrated tannins, subtle oak texture, and notes of cassis, dried herbs, and cocoa. A refined and food-friendly option for guests seeking an authentic red wine experience without the alcohol.
Before bottling, a tiny amount of proprietary extract was added to round out the blend and re-awaken the wine's natural fruit and spice notes. We worked with Ian Blessing, Founder of All The Bitter, to curate a custom extract made from whole botanicals and other natural ingredients carefully selected to enhance the depth and complexity of Tomorrow Cellars Red Blend. Key ingredients like cassis, dark cherry, blueberry, cocoa, and oak evoke rich fruit and tannin structure. At the same time, warm spices and the subtle green notes of mint and sage add lift and intrigue, complementing the wine without overpowering it.
